Lecithin is a natural fat molecule which can be found in plants and animals. It is a large source of phospholipids, a functional component of all cells. It gives structure to the cell membrane and has an important task in controlling the passage of nutrients in and out of the cells. It also plays a role in the transportation of fat, keeping the fat levels, found in the bloodstream, at healthy balanced ratio.
Lecithin can naturally be found in liver and other organ meats, soybeans and egg yolks, and used in foods as a fat emulsifier. It is also a rich source of B vitamins, especially Choline. Although lecithin is a fatty substance, it acts as an emulsifying agent, assisting in the breakdown of fats/cholesterol. It enables fats such as cholesterol and other lipids to be dispersed in water and removed from the body.
